@BenCrowell This journal says 8,000 calories a day for Tour cyclists: mensjournal.com/health-fitness/nutrition/… Admittedly that is for professional athletes, but they are usually not physically the largest people and it is a 21 day race, so 5000 to 6000 calories seems reasonable to me for fit hiker.
